Fruit comes from two contrasting sites — slate-and-granite slopes above the Sil in Amandi, and granite-driven Atlantic-cooled vineyards above the Miño in A Cova. Mostly Mencía, farmed organically (a serious commitment in Galicia's rain), fermented with wild yeasts in chestnut botti and concrete, then aged in old wood.
